Filipino Pork Barbecue Skewers 🍢🔥

I grew up eating Filipino Pork Barbecue at every family gathering—it’s a staple! Traditionally, it’s grilled over charcoal, but I wanted to recreate that smoky, caramelized flavor in the oven. The result? Juicy, tender pork with a sweet, tangy glaze!


For the dry ingredients, you’ll need garlic powder, black pepper, and brown sugar.


For the wet ingredients, grab boneless pork ribs, soy sauce, ketchup, lemon juice, and vinegar.

Ingredients

Dry Ingredients

  • 4 lbs Boneless Pork Ribs (cut into bite-sized pieces)
  • 1 1/2 cup Datu Puti Dark Soy Sauce (adds to the flavor!)
  • 1 1/4 cup Ketchup
  • 1 1/2 cup Dark Brown Sugar
  • 3/4 cup Lemon Juice
  • 1/4 cup Datu Puti Vinegar
  • 1 tbsp Garlic Powder
  • 1 tsp Black Pepper
  • Skewer Sticks (soaked in water for at least 1 hour)

Instructions

🔸 Prepare the Marinade:
For the best flavor, marinate the pork overnight. If short on time, at least 1 hour will still yield delicious results.


In a bowl, mix together soy sauce, ketchup, sugar, lemon juice, vinegar, garlic powder, and black pepper.


🔸 Prepare the pork
Cut the pork into bite-sized pieces, separating fattier cuts to place at the bottom of the skewers. Transfer the cut pork into the marinade. Cover with cling wrap and refrigerate.


🔸 Soak the skewer sticks in water for at least an hour before assembling to prevent burning.


🔸 Oven Prep:
Preheat oven to 375°F (190°C).


🔸 Assemble the Skewers:
Thread the marinated pork onto the soaked skewers.
Cover the exposed skewer tips with aluminum foil to prevent burning.


🔸 First Bake:
✔ Line a baking sheet with aluminum foil and spray with olive oil to prevent sticking.
✔ Arrange the skewers on the tray and baste the top layer with the marinade.
✔ Bake for 15 minutes, then remove from the oven.

Discard any excess juices, flip the skewers, and baste again.

✔ Return to the oven for another 15 minutes.


🔸 Final Glaze & Smoky Finish:
Flip the skewers one more time and baste generously with marinade.
Bake for an additional 10-15 minutes until caramelized and slightly charred.


🔸 Serve & Enjoy!
✔ Remove from the oven and let the skewers cool for a few minutes.
✔ Take off the foil from the tips, serve warm, and enjoy your sweet, smoky, and tender Filipino Pork Barbecue!
