French bite-sized cheese puffs🧀
This French pastry is actually easier to make than you think! I was sure I’d mess it up the first time, but it turned out great. At first, I made things harder by using a pastry pipe—then I realized a cookie scoop works just as well! If you want to watch a video guide, check it out here on my Instagram!
For the dry ingredients, you’ll need all-purpose flour, sharp cheddar cheese, salt, pepper, and your favorite spices.
For the wet ingredients, grab butter, water, milk, and eggs.

🔸 Oven Prep:
Preheat to 425°F (218°C).
🔸 Grate Your Cheese:
Shred 1 cup of sharp cheddar cheese—it's best to grate your own! Pre-packaged cheese contains potato starch, which can affect baking (mine turned out like cookies!).
🔸 Bring to a Boil:
In a saucepan, combine:
✔ 1/2 cup butter
✔ 1/2 cup water
✔ 1/2 cup milk
✔ Pinch of salt & pepper
✔ Your preferred spices (garlic powder, thyme, etc.)
🔸 Add Flour:
Stir in 1 cup of flour, mixing vigorously until fully incorporated. Cook for 2-4 minutes until the dough pulls away from the pan.
🔸 Cool & Mix:
Transfer the dough to a bowl and beat on low speed for 3-5 minutes to cool it down.
🔸 Add Eggs:
Add eggs one at a time, mixing after each until well combined. Once all eggs are added, mix for another 2-3 minutes on medium speed.
🔸 Add Cheese:
Stir in your 1 cup of grated cheese until fully incorporated.
🔸 Shape & Bake:
Using a cookie scoop, drop small mounds of dough onto a lined baking sheet, leaving 1 inch of space between each.
✔ Bake at 425°F (218°C) for 10 minutes, then
✔ Reduce temperature to 350°F (177°C) and bake for 12-18 minutes, until golden brown.
