Sugar Chai Cookies
My family is a big fan of sugar cookies—but when you add warm chai spices? They love it even more! These Sugar Chai Cookies are cozy, lightly spiced, and perfect with a cup of tea or coffee. They’ve got that soft, chewy center with slightly crisp edges, and the flavor? Sweet with just the right kick of cinnamon, cardamom, and ginger. As my step-sister-in-law says, the nutmeg glaze is the icing on top!
For the cookies, you'll need softened unsalted butter, vegetable or canola oil, granulated sugar, powdered sugar, ground spices (ginger, cinnamon, allspice, nutmeg, cardamom, cloves, & black pepper), eggs, vanilla extract, flour, baking soda, salt, and a little cinnamon sugar for rolling.
For the glaze, you'll need powdered sugar, ground nutmeg, and milk.

Instructions
🔸 Prepare the cookie dough
Using a mixer with a paddle attachment, beat the butter and vegetable oil together. It's ok if they don't fully combine.
Add the granulated sugar and powdered sugar and beat on medium speed.
Add in your spices (ginger, cinnamon, all spice, nutmeg, cardamom, cloves and black pepper).
Add the egg and vanilla and mix until well combined.
In a separate bowl, mix together the flour, baking soda and salt.
Pour in the flour mixture into the wet mixture and mix with a spatula. Mix until combined.
Transfer to a small bowl, and chill in the refrigerator for 1 hour or freeze for 15 minutes to help it solidify.
🔸 Baking the cookies
Preheat the coven to 350F.
Take out the chilled bowl out of the fridge.
On a plate, spread your cinnamon sugar.
Using a cookie scooper (preferably 1.5 inches), scoop the dough, roll it around the cinnamon sugar, flatten until it's 1/4 inch in height and 2 inches side, then placed on a parchment paper lined baking sheet. Repeat the process. Make sure to leave at least 2 inches of space between each cookie.
Bake for 8-10 minutes or until cookies at lightly brown.
Remove from the oven and let the cookies cool completely.
🔸 Prepare the glaze
In a bowl. add in your powdered sugar, nutmeg and milk. Mix until well combined. Add in more powdered sugar until you get your preferred consistency.
